Celtuce: a little known but versatile and easily grown vegetable

Celtuce stalksFor a vegetable that few westerners know about, celtuce (Lactuca sativa var. angustana) has a lot of names. It is also called stem lettuce, celery lettuce, asparagus lettuce, Chinese lettuce, stems lettuce, wo-ju, wo sun and wo-chu. It is a type of annual lettuce grown for its enlarged (1-1.5 inches) edible stem which is actually a seed stalk.   Continue reading
